How do I make fall off the bone bbq baby back ribs on my charcoal grill?

We want to use hickory chips to give em a smokey flavor, too.How do I make fall off the bone bbq baby back ribs on my charcoal grill?
I'm a culinary school graduate and an Executive Chef for a fortune 500 company, I use this technique often...I hope you enjoy the results



The best way is to slow cook...so try soaking a bunch of wood chips in red wine...get your grill going put the wood chips in a small pan...set on top of the coals in the grill....now you have a smoker....so on to the ribs the key is in the marinade and the rub....for the marinade



mince garlic,rosemary,onion,



put all ingredients in a freezer bag with about 2 cups balsamic vin. and 1 cup chianti and the ribs

marinade for about 14 hours now for the rub



mix cajun seasoning,granulated garlic,cumin,a bit of jerk seasoning and bar-b-que spice and brown sugar



rub this all over the meat now place meat in the grill and try to control the temp in the grill with water keep it around 250 to 275 cook slow for about 4 to 6 hours you may have to add more wood chips and charcoal to keep the temp where you want it....



for your sauce this is just an idea...add a cup coffee to your bar-b-que or if the sauce sits overnight use a few table spoons of of dry coffee groundsHow do I make fall off the bone bbq baby back ribs on my charcoal grill?
Build a small fire on one side of the grill - 10-15 briquettes. Use a chimney starter - not lighter fluid. Once they're going, add another 30-40 briquettes - unit - around the other ones so they catch and burn slowly. Put your hickory chips in these unlit briquettes (maybe 1 piece of hickory on the lit pile). Do not use charcoal with built in lighter fluid, and this technique won't work with the natural charcoal (burns too hot too fast).



About 3 hours before starting this fire, rub your ribs with a good dry rub. Put your grate on the grill and put the ribs at the opposite side of the grill from the fire - use indirect heat. Cover the grill. If you have a grilling thermometer, adjust the temp so that it's 180F-200F - no more. You may have to adjust your air vents depending on the type of grill that you have. You want to establish a balance of oxygen to the burn rate so that your coals don't get too hot.



Make a nice apple cider vinegar spritz and spritz the ribs every 20 minutes or so. Do it quickly though as you don't want to release too much heat.



Check for doneness after 2-3 hours and enjoy.
You will need to smoke them for a couple of hours or keep them on low heat but keep in mind that you do don't want them to qiute fall off the bone., then it deheats the purpose of having the ribs in the middle to hold onto and eat.

make sure you soak the chips for a long time i like to soak them in beer then i soak the ribs in a little bbq over night then it out with water and low and slow and there fall of the bone i never go over 225 and it takes about 5-6 hours to cook
No serious rib eater would ever boil a rib. Boiling sucks the flavor out of the meat, like when you are making broth or stock.

Precook them in a 300 degree oven for 3 hours before grilling them. Use some type of spice rub before baking them to give them an underlying flavor.



We always do this with ribs, and we LOVE them! Yay charcoal!
Most all good, " fall off the bone " styles of grilling are long term, slow cook, indirect heat methods. Otherwise you need to par-boil them and then grill. Not anywhere near as tasty !
